Instant Pot Gumbo


1 tbl cooking fat

1 12 oz pack of Andouille sausage, cut into pieces on a bias

32 oz chicken stock

1 yellow onion, chopped

2 bell peppers, seeded and diced 

4 ribs celery, chopped

2 jalapenos, diced

1 can fire-roasted diced tomatoes

1 6 oz can tomato paste

2-3 tblsp cajun seasoning

1 lb chicken thighs

16 oz water

1 lb shrimp

Salt to taste 


  1. Press Saute button on Instant Pot and add cooking fat
  2. Brown sausage pieces
  3. Add just enough stock to deglaze the bottom of the pot
  4. Once deglazed, add remaining ingredients except shrimp and stir
  5. Add lid to Instant Pot and set to high pressure for 20 minutes
  6. Allow pressure to naturally release or release the pressure manually 
  7. Remove chicken thighs, shred, and add back to pot
  8. Press Saute button and add shrimp. Cook until pink
  9. Add additional salt or cajun seasoning to taste 
  10. Enjoy! 


  • Any color bell pepper will do
  • The brand of cajun seasoning I use is called The Spice Hunter and I find it at Sprouts 
  • Remove jalapeno seeds to reduce spice or leave them out all together
